But most rice salads seem too generic to have a cosmic impact. Here are two recipes that come like a breath of fresh air to those woefully starved of ideas. The Singapore salad certainly boasts of the roar and tumult of the urban landscape, but is a lot sweeter. That's because it has:

   1 can of pineapple pieces in juice, undrained

 3 cups cooked white rice, chilled and prepared in salted water

 A cup of cucumber, diced

 1 red bell pepper, diced

 1 cup carrots, shredded

 ½ cup green onions, sliced

 2 tablespoons dry sherry

 2 tablespoons fresh lime juice

 1 tablespoon rice wine vinegar

 1 teaspoon fresh ginger, minced

 2 tablespoons fresh cilantro, chopped

 1 tablespoon unsalted peanuts, chopped

Drain the pineapple pieces, and keep 3 tablespoons of juice aside. In a large bowl, combine rice, pineapple, green onion, bell pepper, cucumber and carrots. In another bowl, bring together pineapple juice, ginger, sherry, lime juice and vinegar. Pour this heady concoction over the rice mixture and allow the juices to coat the rice well. Cover and refrigerate for a minimum of two hours. Garnish with cilantro and peanuts just before serving. You could also use cucumber slices for the same purpose.

Another Show-Stopper

Here's another rice salad that is the perfect adjunct to any meal. The Cranberry salad requires:

   1 cup long grain rice

 ¼ cup wild rice

 ½ cup dried cranberries

 ¼ cup parsley, chopped

 ¼ cup green onions, diced

 ¼ teaspoon freshly ground pepper

 2 tablespoons olive oil

 ½ teaspoon ground cloves

 Salt to taste

Cook the rice till it turns out to be soft and fluffy. Add all the remaining ingredients, and your incredibly easy snack or amazing side dish is ready in a jiffy.
